Neon Genesis Evangelion is a classic, very good and very smart show. Definatly a must watch for any anime fan, but I wouldn't recommomend it as an introduction to the genre, as it can be very confusing and a bit...odd at times.
Watching an episode or two wouldn't really do it justice though, it's a continous story of 26 episodes, with a full feature movie showing the last few episodes from a different view (by popular demand as the ending was too confusing apparently 
).
Anyway, recommended watch, classic, hated and loved series.
